Latkes Recipe

 

Ingredients

  • 2 Pounds russet potatoes.
  • 1 Small yeloow onion.
  • ½ Cup of flour.
  • 1 Egg lightly beaten.
  • ¼ Teaspoon baking power.

 

  • 2 Teaspoons salt.
  • 1 tablespoon chopped fresh chives or parsley.
  • Sour cream for serving.
  • Vegetable oil for frying.

Instructions

  • Peal the potatoes and shred (better with a food processor), transfer the potatoes to a large bowl.
  • Shred the onions, transfer to the bowl with the potatoes.
  • Stir the matzo meal, egg, baking powder and salt.
  • Fill a large skillet with oil, heat over medium-high, or when oil is very hot.
  • Working in batches, scoop the potatoes mixture and add them carefully to the skillet, flattening each latke slightly with a spatula must be golden brown for every side.
